Since I was a child I have always loved zucchini pancakes served with sour cream. Just like the potato pancakes but with less carbs, they are also a perfect side dish to go with some kind of a protein.
It is a really easy recipe to follow and also very quick to make! try it yourself and let me know what you think 🙂
- Zucchini – 2 large
- Onion – 1 medium
- Almond flour – 1 cup
- Egg – 1 medium
- Salt – 1/2 tea spoon
- Black Pepper – 1/4 tea spoon
- Avocado Oil- for frying
- Sour Cream – for serving
- Peel of the zucchini skin and shred the zucchini on a small grate and drain from the liquids and put the mixture in a medium bowl. Shred the onion on the same small grate and add to the zucchini mixture. Add to the bowl the egg, salt and pepper, almond flour and mix very well.
- Heat the avocado oil in a large skillet over medium-high heat. Drop rounded spoonfuls of zucchini batter into the hot pan and fry each side for about 4-5 minutes or until turn gold in color.
Optional serving with sour cream
