I want to introduce you all to this wonderful low carb tortilla recipe that I will be using in different kind of dishes like Tacos, Fajitas, Quesadillas and probably some other goodies that will come up to my mind later 🙂
Low Carb Tortilla
A low carb, gluten free tortilla, perfect for Keto, Paleo and other healthy lifestyles.
- In food processor combine the dry ingredients and mix very well. Next with food processor running, add the apple cider vinegar and continue mixing, then add the egg and the water and mix it all until a formation of a sticky ball.
- Wrap the dough in the Plastic Wrap and massage it for a while. I gave it to Daniella to massage it for me, and she said that it felt just like a slime and she didn’t want to stop playing with it 🙂
- Allow the dough to rest for about 10 minutes or so. After that divide the dough to 16 golf size balls and roll them between two parchment sheets until they are about 6 inch in diameter.
- Fry the tortillas in very hot cast iron pan, about 15-20 sec per side ( don’t overcook it because it will become hard and you will not be able to bend it ) until lightly gold.
