I love cauliflower so much that i can eat it raw, boiled, grilled, or my favorite- as a pancake. It really reminds the texture of the potato pancakes, minus all the starch. 🙂

- Boil the cauliflower until it is soft, than place it in a medium bowl and smoosh it with a fork until it has a smooth texture to it. Add 2 eggs and continue mixing. After add the flour a little at a time and continue mixing, add the cream cheese, cheddar cheese(melt it) and the chives and mix. Add all the spices and mix again.
- Preheat the oven to 350 º F and place the formed pancakes on metal tray that cover with parchment paper. baked each side for about 15-20 minutes or until the bottom of the pancake is gold in color.
- And of course my favorite option of serving would be with sour cream 🙂
